Ingredients
  

Pie Crust
  • 315 g all-purpose flour
  • 1 tsp salt
  • 1 tbsp granulated sugar
  • 227 g unsalted butter chilled and cubed
  • 90 –120 ml ice water
Apple Filling
  • 900 g firm apples peeled, cored, and sliced
  • 150 g brown sugar
  • 2 tbsp cornstarch
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 1 tbsp lemon juice
Terracotta-Inspired Finish
  • 1 egg yolk
  • 1 tbsp milk or cream
  • ¼ tsp paprika optional
  • 1 tbsp turbinado sugar

Method
 

  1. Combine flour, salt, and sugar. Cut in chilled butter until coarse crumbs form.
  2. Gradually add ice water until the dough comes together. Do not overwork.
  3. Divide into two discs, wrap, and chill for 30 minutes.
  4. Toss sliced apples with brown sugar, cornstarch, cinnamon, nutmeg, and lemon juice. Rest for 10 minutes.
  5. Roll out the first dough disc and place it in a 9-inch pie dish. Add the filling and cover with the second crust.
  6. Mix egg yolk, milk, and optional paprika. Brush over the crust and sprinkle with turbinado sugar.
  7. Bake at 190°C / 375°F for 45–50 minutes, until golden and bubbling. Cool for at least 2 hours before slicing.

Notes

Use firm apples such as Granny Smith or Honeycrisp. Keep the butter and water cold for a flaky crust. Paprika is optional and only adds warmer color to the crust.
