Ingredients

  • - 2 cups 225 g sharp cheddar cheese, freshly grated
  • - ½ cup 113 g unsalted butter, softened
  • - 1½ cups 190 g all-purpose flour
  • - ½ teaspoon fine salt
  • - ¼ teaspoon cayenne pepper

Method

  1. Grate the cheddar cheese from a block. Let the butter soften at room temperature. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Beat the softened butter and grated cheddar together until fluffy and well combined.
  3. Mix the flour, salt, and cayenne pepper in a separate bowl. Add to the cheese mixture and mix until crumbly. Press the dough together until it forms a cohesive dough.
  4. Shape the dough into a flat rectangle, wrap, and refrigerate for 30 minutes.
  5. Roll the chilled dough on a lightly floured surface to about ¼ inch thick. Cut into strips approximately ½ inch wide and 3–4 inches long. Transfer to the prepared baking sheet, leaving a little space between the strips.
  6. Bake for 15–20 minutes, checking from 15 minutes, until the edges are lightly golden.
  7. Let the cheese straws rest on the baking sheet for 5 minutes, then transfer to a wire rack to cool and crisp.

Notes

Chill the dough for 30 minutes before rolling. Bake until lightly golden and let cool completely on a wire rack for maximum crispness.
